A Medellin chain built around the bandeja paisa, the enormous regional plate of beans, rice, chorizo, chicharron, plantain, avocado and egg that most visitors need to see once to believe. The sancocho, a slow simmered soup of chicken or beef with root vegetables, is the other order regulars come back for, especially on a cooler evening in the hills above the city. Portions run large enough that sharing one order between two is common practice, not a faux pas.
